curry in a can.

Just like my opinion on tom yum, you gotta know how easy it is to make a tasty thai style curry in your home. What do you need? Curry paste, coconut milk and whatever kind of proteins and veggies you would like. When you decide to make a curry, take it to the next level. Saute some garlic, marinate some chicken, give it some love. Below we have created a nice version of our favorite thai curry, the penang. Do it literally or just take the process and apply it to one of a whole slew of variations of curry paste. Experiement. Lo and I have ten different curry pastes still to try, they are all slightly different and interesting. 

 

 

Penang curry.
1 Large boneless skinless chicken breast, cut into medium sized cubes
2 cloves of garlic, minced
1 small can of curry paste (penang)
1 can of light coconut milk
1 can of coconut milk
1/2 cup cauliflower
1/2 red bell pepper, julienned
2-3 small waxy pototoes, roasted and cubed
1/2 cup pea pods
1 cup of cooked brown rice

Heat a wok or sauce pot over medium heat. Add a splash of peanut oil. Saute the garlic until fragrant. Place the chicken into the pot with the garlic and saute over medium heat until mostly cooked. Add the curry paste and saute for a minute or so. Stir in the coconut milk and any veggies you like. We did cauliflower, peapods, red bell pepper, thai chiles, and potatos.
Serve over brown or jasmine rice.

Is this curry sweet, like a green curry? I am slightly addicted right now to green curry but am curious as to the taste of this type.

This specific curry is not sweet, although the coconut milk sweetens it a bit, it's spicy. We are big fans of green curry though. I like peas, courgettes and basil with brown rice in mine. Maybe we'll do a follow up post for you. A little green curry for Maija. Whatcha think?

Yes! I'd love a good green curry recipe. I've made it once at home with some green curry paste I purchased at Lund's and it was good, but not as good as Chiang Mai Thai or Roat Osha green curry...
