beef tartare

Beef Tartare
6oz sirloin, ground or finely diced
1 egg yolk (as fresh as possible)
1/2 tablespoon capers, chopped
1 tablespoon shallot, finely diced
1/2 tablespoon Italian parsley, chopped
1 teaspoon whole grain mustard
a small splash of white wine vinegar
sea salt and fresh cracked pepper, to-taste
Combine beef, egg yolk, shallot, mustard, white wine vinegar and capers in a mixing bowl. Season generously with sea salt and fresh cracked pepper and parsley. Mix gently and thoroughly finding an even distribution of ingredients. Check seasoning and serve with toasted baguette.
