miso glaze

1 tablespoon mirin

1 tablespoon miso paste

1/2 tablespoon ginger, grated

1/2 tablespoon sweet chili sauce

1 teaspoon tamari or soy sauce

1 teaspoon sambal oelek chilli paste

1/2 teaspoon toasted sesame oil

1/2 lime, juiced

Combine ingredients in a mixing bowl and whisk vigorously until smooth. It's important to taste it and add where you see fit - make it your own. You want a nice mix of sweet, sour and salty. It's great with fish or chicken.
