miso glazed mahi mahi en papillote

1 small turnip, sliced on a mandoline
1 cipollini onion, sliced on a mandoline
3 scallions, julienned
2 shitake mushrooms, stems removed
2 baby bok choy, sliced vertically
4 tablespoons miso glaze (recipe link)
1 serrano pepper, sliced on a bias (optional)
parchment paper
Create the parchment packets. Place one fillet into each packet. Generously apply 2 tablespoons of the miso glaze over the fish. Divide the vegetables evenly between the packets. Everything in the packet will be steamed together, so place the veggies in a visually pleasing manner. Bake in the oven at 325ºF 10-12 minutes until done. Cut packets open and serve with jasmine rice (optional).
*The mahi in this recipe can easily be substituted with snapper or halibut.
