bacon, brussel sprout and sunchoke hash.

This recipe is really simple and one of my favorite Sunday morning side dishes.

2 slices of bacon, cut into lardons (matchsticks)

5-6 brussel sprouts, sliced thinly

3-4 sunchokes, sliced thinly

salt and pepper to taste

green onion garnish, sliced

drizzle truffle oil (optional)

 

Warm a saute pan over medium heat, add bacon and cook until there is a nice amount of fat rendered out of the bacon. Add sliced brussel sprouts and sunchokes, saute until sprouts and sunchokes are cooked through, about 4 minutes. Season with salt and pepper, drizzle a small amount of truffle oil if using, garnish with green onion or chive and serve with eggs.
