poached egg with sausage and spinach.

I'm a mad man for this breakfast. An absolute favorite that we have almost every weekend. This isn't so much of a recipe, because it's more about technique. Poaching an egg is a great skill to have, so don't be scared.. give it a shot.

For the spinach.

1 bunch of fresh spinach, cleaned

1/2 tablespoon olive oil

1 clove of garlic, sliced

a pinch of dried crushed chilies

1 teaspoon kosher salt

1 tablespoon water, a healthy splash

fresh grated parmesan (optional)

Salt and pepper to taste.

In a saute pan over medium heat add olive oil, sliced garlic and crushed chilies. Allow the garlic to just begin to brown, add spinach and water and salt. Stir spinach around, cook until soft and water is mostly evaporated, 5-6 minutes. Add grated parmesan if using and season to-taste.

For the poached egg.

Fill a sauce pot with water and bring to a boil. Lower heat, the idea is to keep the water just before boiling around 175ºF. Add 1/4 cup of apple cider vinegar to the water. The vinegar will help keep the white of the egg together.

Crack an egg into a small dish. Before placing the egg into the poaching liquid take a spoon and give the liquid a spin by swirling the spoon in the pot. Tip egg in dish into the center of the swirling poaching liquid. Cook for 3-4 minutes until egg whites are cooked through but the yolk is nice and runny and warm. YUM! Repeat process for as many eggs as you're cooking. I use two pots to poach. Serve with sausage patty, sauteéd spinach and grainy toast with a splash of tobasco.

I love anything about poached egg! How could I resist a melting yolk with fabulous side dishes!?

This does look like a fantastic breakfast. Poaching is a great reward, but does take some skill, daniel's a little better at it. Great post!

This looks like my perfect breakfast. One tip I find that works for poaching an egg is to dip the egg into the boiling water while still in the shell for 30 seconds or so to allow the egg to warm up before putting it into the water.
