I was speaking with a chef of a local spot, Bar La Grassa, and he was saying they brine theirs and since their prep on sweetbreads is near perfection, I went that route this time. I loaded up some water with salt, garlic, coriander and fennel seeds. I didn't measure how much of what ingredient I put into the brine, but here is where you can get creative. Put anything in there you like. Just make sure that the water brine tastes nice and salty. Remember that this is how you are going to impart flavor into those sweetbreads.
Heat up your brine to dissolve the salt. Cool the brine in the refrigerator. Once the brine has cooled place the sweetbreads into it and let it hang out over night in the refrigerator.
After brining the sweetbreads, clean off the outer membrane of the sweetbreads and break them down into small pieces. Heat some milk over medium-low heat and poach the sweetbreads for 10-12 minutes until the sweetbreads are nice and firm. Remove the sweetbreads with a slotted spoon and cool. This can be done the night before you are ready to use them, just store the poached sweetbreads in milk in the refirigerator.
For the dish:
1 cup of lentils, cooked
1/2 yellow onion, chopped
3 cloves of garlic, sliced
1/2 pound of spicy sausage (fresh chorizo would be nice)
a small handful of poached sweetbreads
1/2 cup corn meal
1 teaspoon paprika
a pinch of salt
1 tablespoon of butter
salt and pepper, to-taste
fresh chives
Soak the lentils for 30 minutes. Sweat the onion and garlic in a small sauce pot for 4-5 minutes. Add the lentils and cover with a few cups of water. Bring the water to a boil and reduce the heat. Cook for 25-30 minutes until the lentils are cooked to your liking. Strain the lentils.
Heat up a non-stick or cast iron pan. Place the sausage into the pan and cook until crisp, brown and cooked. Add the lentils and chives, season with salt and fresh cracked pepper.
Mix the corn meal paprika and salt. Lightly coat the sweetbreads in the mixture, shaking off any excess. Heat a bit of butter over medium heat. Cook the sweetbreads in the pan until golden brown and crispy, turning occasionally.
Serve the lentils and sausage with the cooked sweetbreads. I also served some simply roasted carrots with the dish - just a little olive oil, salt and pepper in a hot oven. There was also some experimental pickled fennel that found it's way onto the dish.
The important thing to remember is, sweetbreads are just another delicious part of an animal. Source your sweetbreads from local farms that you trust and try them. You won't regret it.
